Healthy(ish) Protein Banana Bread

This is another, have you quarantined if you haven’t made banana bread? With everyone making banana bread, I’ve been craving it – but with all the baking I’ve been doing (uh, hello Gigantic Chewy Coffee Chocolate Chip Cookies that have been on repeat), I needed to lighten this guy up. Big time.

Enter: healthy(ish) protein banana bread. It’s actually pretty light if you skip the whole put-frosting-all-over-it-part!

Turkey Enchilada Meatballs

Guys. I live for a great meatball recipe and this one is, by far, my #1 favorite I’ve created. I love Mexican dishes, but my husband isn’t so crazy about Mexican food. I made these and he loved them so much he asked me to make them again already – so that’s really saying a lot about these!

These are actually super easy to make, and an awesome weeknight dinner. I just went back to work today and I’m looking forward to making these meatballs again this week because I know they’ll be a quick meal but still something fun and exciting!

Homemade Samoa Bars

Those dang Girl Scouts, amirite?! My husband loves the Samoa cookies and I’ve been trying to recreate them at home for him so he doesn’t have to wait until it’s Girl Scout cookie season. To be honest, I’ve been struggling with an actual cookie and was going to throw in the towel all together. Then I was like, duh, Hailey, just make them into a bar. So. much. easier.

You know I love an easy dessert recipe and these are definitely easy. The hardest part is making the short bread, which is really NBD. I used premade caramel sauce because I wanted these to be something I could quickly throw together from ingredients I typically have on hand. I used finely grated coconut, so if you have thicker shredded (unsweetened) coconut I think that would be best – you’ll get more coconut flavor.

Burrata and Tomato Chutney Appetizer

Now that our front porch is extra liveable space (reveal coming next week!), we’ve really taken to enjoying a cocktail and appetizer outside on Fridays and Saturdays. Trying to embrace the whole date night at home thing, which is so easy in our new outdoor space.

Last week, I made a batch of tomato chutney (which I want to put on everything right now), and toasted up some bread, served it with burrata and a glass of wine on our little porch. It was a nice change of scenery, and a fun appetizer that felt a little more elegant for a Friday night.

Oven Roasted Salmon Panzanella Salad

Anytime I make a Panzanella salad I always wonder why I don’t make them more. This salad was no exception – the salmon came out perfectly and it was a fun weeknight dinner. I’ve been trying to make our weeknight dinners more interesting during quarantine and this one is definitely one we’ll be having again soon.

The salmon was so simple to roast – just a bit of butter, olive oil, garlic, salt, pepper and fresh basil. It was ridiculously delicious!

Chickpea & Pepper Salad

This one is fondly known around here as the “pizza salad.” All of the spices combine together and kind of, sort of, if you close your eyes, taste a little bit like pizza. Listen, when you’re trying to lighten up a few meals, this one is a good choice – the flavors hit the spot and has enough protein that it’s satisfying.

This is a great recipe for meal prep – the flavors really develop in the fridge, or if you just need to whip up a quick lunch on a weekday between zoom meetings.

Gigantic Chewy Coffee Chocolate Chip Cookies

You know that feeling when you make something stupid good? Yeah, that’s these gigantic coffee chocolate chip cookies. They’re just stupid good.

I got a jar of instant coffee for those Dalgonas from earlier in the week and wanted to see how else I could make use of it. I can’t imagine going through an entire jar of instant coffee that quickly. Let me tell you – after making these cookies, I want to put instant coffee in and on everything to see what happens.

Deviled Egg Salads

I think my obsession with deviled eggs started in college, when I would just grab a few hard boiled eggs, a packet of mayo and a packet of mustard and make deviled eggs in the cafeteria. You know I love salt, and I also love mustard, so deviled eggs really became a vehicle for salt and mustard to get in my mouth.

I started making this deviled egg salad, because, lets be honest, peeling and making deviled eggs look pretty is so tedious. And what is more frustrating that eggs that don’t peel well when you’re trying to make some deviled eggs? Even when you put baking soda in the water (more on that later).

Boozy Peanut Butter Dalgona

Did you even quarantine if you haven’t made a Dalgona? I’ll tell you what – you haven’t lived if you haven’t made these boozy peanut butter dalgonas!

I had been putting off making a Dalgona for what feels like months because, seriously, everyone is doing it and what can I show you that you hadn’t seen already? And then, I thought, maybe this would work with that peanut butter whiskey sitting on our bar. I can tell you, it does. Oh boy, does it ever.

15 Minute Personal Pizzas

I think if I had to choose one food to eat for the rest of my life it would be pizza! The best thing about these pizzas, besides being utterly delicious is that you can have them ready faster than you can order delivery.
