Deviled Egg Salads

I think my obsession with deviled eggs started in college, when I would just grab a few hard boiled eggs, a packet of mayo and a packet of mustard and make deviled eggs in the cafeteria. You know I love salt, and I also love mustard, so deviled eggs really became a vehicle for salt and mustard to get in my mouth.

I started making this deviled egg salad, because, lets be honest, peeling and making deviled eggs look pretty is so tedious. And what is more frustrating that eggs that don’t peel well when you’re trying to make some deviled eggs? Even when you put baking soda in the water (more on that later).

Fried Chicken Sandwiches

Earlier this month, we went to Nashville for hubby’s 40th/CMA Fest. We had so much fun and also ate our weight in fried chicken. Let me tell you. That spicy fried chicken thing they’ve got goin’ on in Music City is to. die. for.

I wish fried chicken didn’t have calories, because I’d be making this on the reg. But, these sandwiches gave us just enough of a little taste of Nashville at home.

To kick these sandwiches up a notch, I generously added spicy honey on top of the fried chicken. And then, topped them with the Trader Joe’s sweet and spicy jalapenos that are amazing (and I literally add to everything these days) and some spicy pickles.

Tomato Ricotta Toasts

Toast-for-dinner is one of my go-tos for nights when I have no time, or get home late, or feel incredibly uninspired. And then, every time we do actually have toast, it always feels like such a little treat!

It’s such a simple idea that once you make a few different variations, you’ll have them in your back pocket when you need a quick meal or are having one of those no-idea-what-to-make-for-dinner kind of nights.

Grilled Ricotta Cheese

If you don’t like grilled cheese, I’m really not sure we can be friends! Okay, maybe we can, I’ll take it under consideration. But guys. You’ve gotta try this grilled ricotta cheese!

The ricotta is so creamy, and a little salty. The bread has the best crunch. A little basil whipped into the ricotta and dropped on top – so summery!

Turkey Paninis with Candied Bacon & Avocado

There are some holy grail of ingredient combinations and I swear, we found it in this panini! Extra savory bread, fatty avocado, sinfully good bacon? Yes, please.

I genuinely love a good sandwich for any meal of the day. Breakfast, lunch, dinner, snack. Doesn’t matter to me. #sandwichfan for life, ya know?

I whole heartedly believe the trick to a top notch panini is mayo. On the outside. Instead of butter. Have you heard this trick before? Usually it comes up in the good old, How to Make the Best Grilled Cheese. The trick is never the cheese, it’s in the mayo on the bread! If you haven’t tried it, you should. If you think it’s gross, I hear you, I get it, I’m with you. I respectfully disagree and go back to, if you haven’t tried it, you should.
