Chickpea & Sweet Pepper Pizza Salad

The green peppers and spices really give you a hint of pizza in a much lighter dish. Perfect for meal prep - the flavors really develop in the fridge!

  • 1 15 oz can chickpea beans, drained and rinsed
  • 1 small green pepper, diced
  • 1/4 c roasted red peppers, diced
  • 6-8 cherry tomatoes, halved
  • 1 tbsp champagne vinegar
  • 1/4 tsp ground garlic less if you don't like a lot of garlic
  • 1/4 tsp red pepper flake
  • 1 tsp oregano
  • salt, pepper, to taste


  • Combine all ingredients in a bowl, stir to combine. Serve with toasted naan and garnish with parmesan and parsley.
