Roasted Fingerling Potatoes with Cilantro Vinaigrette

Fingerling potatoes are one of the best for roasting! They hold up to high temperatures and get crispy on the outside while staying creamy on the inside. Drench them in that cilantro vinaigrette for a fresh pop of flavor.

Ingredients
  

  • 1 batch of cilantro vinaigrette see notes for link
  • 2 lb fingerling potatoes, halved
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • salt & pepper to taste

Instructions
 

  • Preheat the oven to 400.
  • Slice your fingerling potatoes in half, set aside. 
  • Melt butter and olive oil together over medium heat in an oven proof pan (such as a cast iron skillet). 
  • Sautee the minced garlic in the butter-oil mixture until fragrant, about 2-3 minutes. 
  • Add the halved fingerling potatoes and stir to coat. 
  • Bake uncovered for about 30-35 minutes or until desired crispness. 
  • Top with salt & pepper. Serve with cilantro dressing.
