Turkey Enchilada Meatballs

Guys. I live for a great meatball recipe and this one is, by far, my #1 favorite I’ve created. I love Mexican dishes, but my husband isn’t so crazy about Mexican food. I made these and he loved them so much he asked me to make them again already – so that’s really saying a lot about these!

These are actually super easy to make, and an awesome weeknight dinner. I just went back to work today and I’m looking forward to making these meatballs again this week because I know they’ll be a quick meal but still something fun and exciting!

10 Minute Chicken Tostadas

Anyone else keep putting on jeans just to keep themselves in check during quarantine? I’m finding myself reaching for comforting food, and definitely baking more than usual, so we are trying to reign it in a little over the next few weeks. These chicken tostadas are so quick and easy. You can 100% customize them, and they’ve got a reasonable calorie count for how much flavor they pack.

So, you do you on these, but you definitely want to make this cumin lime crema. You can put it on anything – grilled chicken, veggie kabobs, some crispy potatoes – anything!

Churro Bites Recipe for Cinco de Mayo

Guys, I whole heartedly intended to make churros from scratch. And then, I was like, nope. Hard no. Let’s make cheaters. So. Here we are today, with churro bites that literally require 4 ingredients. Okay, plus maybe some raspberry “sauce” (2 ingredients) and caramel (store-bought) for dunking.

Maybe you’ve seen this short cut before, but it’s one of the. best. to have in your back pocket for a super quick donut-y dessert.

Posole with Chilies & Pork Recipe

Oh, y’all. If you’ve never had posole, you’ve gotta make this posole recipe with chilis and pork ribs! I will be making chili a whole lot less now that I know how to make posole. It’s like a chili in terms of flavor and like a bowl of ramen in terms of toppings, and if you didn’t know this about me, I’m all for lots of toppings and condiments.

Now, I want to tell you – I like a quick and easy recipe as much as the next gal, but this one is a project recipe. Most of your time is hands off, but, it’s a project. And you gotta know that going in. But it can be made ahead, which is super helpful for when you make this for your cinco de mayo party!

Steak Quesadillas Recipe for Cinco de Mayo

This year, we’re not doing the whole taco bar thing. In fact, there are. no. tacos. on this year’s cinco de mayo menu! But, there are steak quesadillas! I’ll be honest with you – when I was thinking about the menu and I put steak quesadillas on, I thought, “Hailey, nobody needs a recipe for steak quesadillas! It’s steak and cheese and tortillas!” But, I actually really loved how the steak came out and 100% need to share this recipe!

Now, the good news is: steak quesadillas are so super easy to make. The even better news: They’re delicious. It’s really a win-win, isn’t it?

How to Make Simple Guacamole

When I was getting ready to make this guacamole, I realized I didn’t have any tomatoes! Can you imagine my horror? Then I remembered an episode of TSC’s podcast where they interviewed Dr. Steven Gundry. Now, I don’t want to go down this rabbit hole of the Plant Paradox and what veggies are OK and which aren’t. But, he said in the episode that traditional guac does not have tomatoes. Never knew that! So, I remembered that moment from the podcast just in the nick of time before I ran out to buy a tomato to make guacamole.

I think part of me loves guacamole so much, and really avocado so much, because it’s such a good vehicle for salt. And y’all know how much I love salt! But really, I would encourage you, unless you have a health reason not to, to up the salt on your guac! It brings all the flavors together. I start with about 1/4 tsp of salt per avocado, mix all the ingredients up and then I taste with a chip. I think the key is to taste with whatever dipper you are serving, because if it’s a salty tortilla chip you have to account for it in the guac. Just taste as you go!

I love how a homemade guacamole tastes fresh – don’t you think? And it’s really so much better than a prepackaged guac from the store. I will say, though, if you don’t have the time or you can’t find ripe avocados (or yours haven’t ripened yet), the store-made Whole Foods guacamole is so, so good. I am game for buying their guac any day. Don’t buy the stuff that’s vacuum sealed in plastic, it’s not the same. Just make it!

Simple Fish Tacos for Cinco de Mayo

I love a good fish taco, but I’m pretty sure I’ve spent 3/4 of my life never ordering them. I can’t remember exactly the first time I had a fish taco, but hands down the best I’ve ever had is at Taco Boy in Charleston, South Carolina. So next time you’re there, but sure to go to TB and have all the tacos!

I’ll serve these tacos with guacamole, pickled red onions and a squeeze of fresh lime juice. I used tilapia but you can use any fresh, hardy white fish you like!

Slow Cooker Barbacoa Tacos for Cinco de Mayo

Today, we’re getting you ready with an amazing taco perfect for your cinco de mayo parties this weekend! The barbacoa comes together quickly in a crockpot, topped with a simple pico de gallo, or whatever other toppings you enjoy!

I’m planning to serve these with our jalapeno margaritas, which compliments the soft spiciness of these barbacoa tacos.

Homemade Flour Tortilla Recipe for a Cinco de Mayo Dinner Party

A good taco recipe can be elevated to a great taco with a homemade, from scratch, worth every second of effort, tortilla recipe!

This easy tortilla recipe comes together with just a few ingredients, and following just a few steps that I promise anyone can do, you’ll have fresh tortillas in about 15 minutes.

A stand mixer is all you need – but it will also work if you mix by hand! I swear, just a little scoop of guacamole is really all you need. They’re so soft, and fresh, and just all around heavenly. It takes you from taco night to TACO PARTY!

 

Fresh Homemade Flour Tortilla Recipe

Yield: About 16 tortillas | Time: ~30 minutes

Ingredients

3 cups unbleached flour

1 tsp baking powder

2 tsp salt

1 cup warm water

1/4 cup olive oil/vegetable oil

 

Directions

  1. Combine dry ingredients in stand mixer fitted with dough hook.
  2. Put stand mixer on low speed to mix dry ingredients together briefly.
  3. While the stand mixer is on a low speed, slowly add water and oil. Increase the speed to a medium-to-high setting.
  4. Once the dough turns into a ball, slow the speed until most of the dough is a ball on the dough hook.
  5. Turn the dough onto a floured surface.
  6. Roll the tortilla dough out to about .75  inch thick.
  7. Cut dough into 16 even pieces.
  8. Roll the dough into balls (like a meatball!); place onto a tray or cookie sheet and gently press down. Do this with all of the 16 pieces of dough.
  9. Cover with a kitchen towel and allow the dough to rest for at least 15 minutes, or up to 2 hours.
  10. Heat a skillet until it is very very hot – you want the tortillas to cook up quickly!
  11. Roll each tortilla ball until it is very thin, or use a tortilla press!
  12. Heat each side of each rolled out tortilla for about 10-15 seconds.
  13. Cover the tortillas in a stack as they come off the skillet!
  14. Enjoy with your favorite tacos!
