Salt + Lime + Mint Watermelon Snack

Do you ever get into phases where this one thing is basically the only thing you want to eat? That’s where I am right now with this watermelon snack, which, by the way, is 1 shot of tequila shy of a deconstructed margarita. If you’ve never had watermelon with salt before, try it. Once you do, you’ll never want watermelon without a dash of salt again.

Not only is it a perfect summertime snack, it’s basically the best snack to have poolside. You’re welcome.

Now, salt selection is incredibly important here – you want a large flake salt, like Maldon. A regular table salt will melt right into the watermelon and for this, you’ll want something that can hold up to the watermelon and not completely soak in but give you a little crunch. Maldon is my go-to for this job!

The squeeze of lime and chopped mint bring the whole experience together for a perfectly refreshing treat. If you really want to go crazy, cube the watermelon, add the salt, lime, mint and feta! Bam, poolside salad ready to go!

Salted Watermelon with Lime and Mint

Once you have watermelon with salt, you’ll never go back. Add a dash of lime juice and some chopped mint for a refreshing summertime snack.

Ingredients
  

  • watermelon, cut in cubes or wedges
  • large flake salt, such as Maldon
  • lime, juiced
  • mint, chopped

Instructions
 

  • Slice the watermelon into wedges or cubes. 
  • Add desired amount of salt (start with a little to try it first), lime juice and mint. 

Notes

For 1/4 of a watermelon I used:
1 tbsp (ish) of salt
5 mint leaves, torn
1/2 juiced lime
