Leave it to St. Paddy’s day to be the perfect excuse to drink some whiskey all for the sake of research. Really guys, happy to take one for the team here to bring you a fun cocktail! Enter: Irish Godfather Cocktails.

My first introduction to this cocktail was with my family, exchanging stories about our grandfather just after he passed away early this year. My grandparents have always enjoyed a pre-dinner cocktail, every day, and it’s really a family tradition I can get behind. My grandmother told us the only way she’d drink whiskey is with a splash of amaretto on top. Genius, she is! And then she was like, “Hailey. It’s a thing. It’s called the Godfather!”

You know my next question to her, right? “What about the godmother!” And then my aunt so kindly informed me there is such a thing and it’s vodka with a splash of amaretto. Guys – mind. blown. I’m here for it.

I have to confess, I really like to water down whiskey. If you don’t, no problem. Go with one big ice cube or none – you do you! But I like the crushed ice. For me, it really tones down that whiskey bite.

Also, you can make a godfather cocktail with any whiskey or bourbon. I went with Jameson, because, hey, we’re talking St. Paddy’s day and it’s an Irish Whiskey (is it whisky?) and so – Irish Godfather. So clever, right? Ha.

Any way, it’s a nice departure from the standard Guinness and packs quite the punch. Don’t forget – you can just swap out the whiskey for vodka, and call it a Godmother!

Cheers!
