No-Bake Chocolate Covered Shortbread Cookies

Oh, guys. Get ready. This is the easiest dessert EVER. Okay, maybe not really as easy as this one from Christmas, but really. This is crazy easy and you can totally say you made it all if you wanted to. These no-bake chocolate covered shortbread cookies are a go-to of mine when I need to get something together quickly.

These cookies are dipped in chocolate and then in nuts on the edges – cute right?! Any chopped nut will work, but for St. Paddy’s I went with pistachios, ya know, to be a little more festive.

You need just three ingredients for these:

Yes – you use premade, store bought shortbread cookies! I prefer the Kebler ones, tbh, if I’m trying to pass them off as homemade. The ones that are perfect rectangles with the holes are too obviously store bought. But, I’m a terrible liar so if someone says, “I can’t believe you made these!” I cave and tell them I bought the cookies and dunked them in chocolate.

These little guys really are such a nice treat and look so cute on a platter. You use the same chocolate you would for chocolate covered strawberries. I always get the Dolci Frutta, which in my grocery store is with all the berries. And I don’t have a microwave, so if you don’t either, don’t worry! You just use a double boiler (or a heat-safe bowl over a pot of simmering water) to melt up the chocolate.

So, you melt up the chocolate, dip the cookies in the chocolate and then – this is v important – you shake the excess chocolate off the shortbread cookies. You want to make sure you get as much excess off the cookie as you can because if it’s still dripping when you dunk it into the nuts, the nuts will fall right off with the dripping chocolate.

I’ve also made these chocolate dipped shortbread cookies with:

  • Chopped raw hazelnuts
  • Slivered almonds, roughly chopped
  • Chopped raw pecans (my favorite!)

You could even skip the nuts and go with sprinkles! Or roll with a combo of chopped nuts – the possibilities are endless, but this is so perfect when you have no time (or you get home from work late, have to go to a friends’ house and they ask you to bring dessert but you don’t want to buy a premade dessert).

No-Bake Chocolate Dipped Shortbread Cookies with Nuts

These are the perfect treat when you’re short on time and/or if you love savory-sweet desserts! Store bought shortbread brings this recipe together in 30 minutes.

Ingredients
  

  • 1 package Kebler shortbread 20 cookies
  • 1/2 container of chocolate shell see notes
  • 1/2 cup chopped pistachios or other nuts (or sprinkles)

Instructions
 

  • Prepare chocolate in microwave or with the double boiler method. 
  • Dip cookies one at a time in chocolate, coating only the bottom 1/3 of the cookie.
  • Shake off excess chocolate. 
  • Dip the chocolate in the chopped nuts. 
  • Set aside to dry; repeat with remaining cookies.

Notes

I use the Dolci Frutta chocolate shell,  which does not need to be refrigerated and will not melt. If you use regular chocolate chips, you should probably refrigerate to avoid melting. Using this chocolate shell makes it much easier, though!
