Tomato Ricotta Toasts

Toast-for-dinner is one of my go-tos for nights when I have no time, or get home late, or feel incredibly uninspired. And then, every time we do actually have toast, it always feels like such a little treat!

It’s such a simple idea that once you make a few different variations, you’ll have them in your back pocket when you need a quick meal or are having one of those no-idea-what-to-make-for-dinner kind of nights.

Fried Chicken & Savory Cheddar-Chive Waffles Recipe

If life is all about balance, what better dish than fried chicken and waffles? A little sweet, a little savory. Chicken is protein, so that’s healthy, right?! Balance, guys, balance. For this go, I opted for cheddar and chive waffles and WOW. They. were. great!

Cheddar and chive waffles are one of my favorites, and they really taste amazing with the fried chicken. Sometimes, you don’t really want a super sweet waffle to go with that crispy chicken, amirite?!

Cobb Salad with Homemade Ranch Dressing Recipe

Don’t you find it so absolutely easy to fall into a salad rut? Especially if it’s something you have basically every day for lunch. How many times can you have chicken + lettuce + some kind of veg? Too many! So, I’m working in these cobb salads to help shake things up a bit. Plus, homemade ranch dressing doesn’t hurt either.

It’s all about the toppings with a good salad, isn’t it? For these, I just went with tomatoes, bacon, gorgonzola, hard boiled eggs, marinated grilled chicken and Trader Joe’s chili corn salsa (because I’m 100% obsessed with the stuff, but also because I forgot to buy an ear of corn). I’d also recommend throwing avocado slices on this guy, too!

Grilled Ricotta Cheese

If you don’t like grilled cheese, I’m really not sure we can be friends! Okay, maybe we can, I’ll take it under consideration. But guys. You’ve gotta try this grilled ricotta cheese!

The ricotta is so creamy, and a little salty. The bread has the best crunch. A little basil whipped into the ricotta and dropped on top – so summery!

Pomegranate Glazed Chicken Wings

I can’t tell you how many times I’m at the gym, or in the shower, or driving or shopping or see an ingredient at the market and come up with some random idea I scribble in a notebook or drop in the notepad on my phone. These are one of those ideas that kept coming up. Honestly, walked into these pomegranate glazed chicken wings not having a damn clue how I’d make them. But they worked and we loved them!

Quick & Easy Pesto Pasta Salad

There are so many reasons I love warmer weather, but for sure I love the change of food. The things that are in season and the foods we start to crave as the temperatures rise changes so much, doesn’t it? There are two things that feel like the true start of the warmer months to me: a cheeseburger and a cold pasta salad. Today, we’re talking about a quick and easy pesto pasta salad with just a few ingredients and almost no effort.

If you entertain a lot during the summer months, or even go to friends’ and family a lot in the summer months, a solid pasta salad is perfect to have in your back pocket. With the right ingredients a pasta salad can be so refreshing and the perfect side dish for grilling.

Posole with Chilies & Pork Recipe

Oh, y’all. If you’ve never had posole, you’ve gotta make this posole recipe with chilis and pork ribs! I will be making chili a whole lot less now that I know how to make posole. It’s like a chili in terms of flavor and like a bowl of ramen in terms of toppings, and if you didn’t know this about me, I’m all for lots of toppings and condiments.

Now, I want to tell you – I like a quick and easy recipe as much as the next gal, but this one is a project recipe. Most of your time is hands off, but, it’s a project. And you gotta know that going in. But it can be made ahead, which is super helpful for when you make this for your cinco de mayo party!

Steak Quesadillas Recipe for Cinco de Mayo

This year, we’re not doing the whole taco bar thing. In fact, there are. no. tacos. on this year’s cinco de mayo menu! But, there are steak quesadillas! I’ll be honest with you – when I was thinking about the menu and I put steak quesadillas on, I thought, “Hailey, nobody needs a recipe for steak quesadillas! It’s steak and cheese and tortillas!” But, I actually really loved how the steak came out and 100% need to share this recipe!

Now, the good news is: steak quesadillas are so super easy to make. The even better news: They’re delicious. It’s really a win-win, isn’t it?

Citrus Roasted Salmon with Jalapenos Recipe

Guys! I forgot to share this recipe a few weeks ago when blood oranges were in season (read: were my obsession). With or without them, this citrus roasted salmon with jalapenos is hands down my new go-to recipe for roasted salmon. There’s so much flavor you can totally make it for dinner guests, but also really makes a weeknight dinner feel special. We can’t eat plain chicken and broccoli every night, right?

I mean, doesn’t that just look amazing?! I think I’ll have to make it again tonight since it’s Good Friday – no meat! But really. This is basically the equivalent of plain chicken and broccoli just actually good with a lot of flavor. But there’s practically nothing to this!

Strawberry Chipotle Glazed Pork Tenderloin Recipe

What comes to mind when you think of an Easter main dish? I was honestly st-rug-gl-ing with this year’s menu because I thought lamb (did that last year) or ham. And I don’t like ham (only in a croque monsieur, and only in a croque in Paris). So, I thought, let’s dress up some pork tenderloin! And then, this strawberry chipotle glazed pork tenderloin was born. And y’all. It’s SO easy.

I wanted to showcase strawberries in the dish to really bring the whole #springtime vibe to the table, and I wanted to keep everything feeling light and fresh. This pork went perfectly with the braised artichokes and burrata salad from earlier in the week. And, the dessert you’ll see tomorrow….went perfectly with this, too!
