Guys, I am SO into strawberries right now! Yesterday, we shared the Strawberry Chipotle Glazed Pork Tenderloin we’re serving up for Easter and today – a Strawberry Pound Cake! I’m so obsessed with this cake. It is so good. We’ve already made and devoured two of these. In one week.

This cake is: moist, sweet but not too sweet, full of strawberry flavor, buttery, and did I mention, moist? Don’t you love that word? I’ll say it again for the people in the back – this pound cake is so MOIST!

I’m also writing this as we’re baking a third (a gift to a friend, thankfully not staying in the house), and it’s wafting in here and it just even smells so incredible.

Triple Lemon Poppyseed Buttermilk Quick Bread

It’s Friday, we made it! Now, let’s jump right in to this quick bread and make this, too. I have to tell you, I’m actually very ready for spring. I’m 100% a fall and winter girl, and not a huge fan of summertime heat and humidity. But there’s something about this past winter that has felt just too long. I’m ready for warmer days that have the windows open and take us outside in actually enjoyable temperatures.

I’ve really been trying to force spring over here, between wearing my espadrilles even when it’s still a tad bit chilly outside and pushing the boundaries of what’s actually in season to force some more springtime recipes in our kitchen. I’m ready for all the things to be lemon-ified! Look at us, making up words over here!

This quick bread is:

  1. Delicious, bright and cheery
  2. Somewhere between moist and not too moist
  3. Damn quick to make
  4. Not pound cake.

Bourbon Bread Pudding with Candied Nuts

Alternate title: Holy-Shit-That’s-Good Bread Pudding. Bread pudding is one of those desserts that feels like it takes so much effort, but it really doesn’t. In fact, you likely have all the ingredients you need already and could most likely make it without a recipe. It’s so simple. So straightforward. And 100% customizable.

Now, bread pudding is really just bread, eggs, milk, sugar. I like a bunch of mix-ins in my bread pudding for extra texture and flavor. Plus bourbon, because we’re a House of Bourbon family. And either whipped cream or melted ice cream on top. But it truly is a simple recipe. And if you’re on a budget, it’s also a great dessert!

You can use just about any bread for your bread pudding, but I went with Trader Joe’s Croissant Bread. Their CB is a revelation. So much flavor, so much flake, so much good. You could cut up croissants, you could use brioche. I would even use a white bread loaf that’s yet to be sliced and staled just a bit. Any bread will do!

Rugelach Palmiers Recipe

Happy Valentine’s Day, everyone! I’m not usually excited for Valentine’s Day, always kind of seemed silly, but it’s a sweet little holiday, isn’t it? Hubby and I don’t celebrate this one, but I caved and gave him a card and chocolates anyway. I felt like I couldn’t ignore Valentine’s Day! This week also marks 8 years since we started dating so it’s nice to give that a little head nod.

I wanted to share these Palmiers – French elephant ears – on V-day since they bake into little hearts! Aren’t they adorable? They’re also incredibly easy, so run over to the grocery store and pick up some puff pastry to make these tonight!

French Palmiers are typically just cinnamon sugar in the middle, so if you don’t want to make these with the Rugelach filling you can just combine some sugar and cinnamon and then bake them up. They are still so good with just a simple filling!

I love a Rugelach cookie so I wanted to try these with a little bit of something more substantial than cinnamon and sugar. Rugelach filling is usually a combination of walnuts, raisins, sugar and cinnamon. I went to the store, grabbed the puff pastry, and thought I had walnuts and raisins at home…I had pecans and cranberries and sometimes you just have to improvise. And it worked!

How to Make Caramel Chocolate Covered Pretzel Sticks

You know how right after Thanksgiving you feel like you are ready to kick of the Christmas season? After Thanksgiving dinner, we always watch Christmas Vacation, which feels like a real transition to the second part of the holiday season. That’s kind of how I feel about the Super Bowl. Now that the game is behind us, I’m ready to officially shift in to Valentine’s Day. And I expect everyone to transition with me, since for dessert at our Super Bowl party everyone had these Valentine’s Day caramel chocolate covered pretzels.

Admittedly, I’ve been avoiding the whole chocolate covered pretzel thing for quite literally no reason. I think because I couldn’t wrap my head around the combination of sprinkles that would be pretty? So ridiculous to not make them for such an easy problem to solve – and it really was easy to solve! I just went to Michael’s, picked one set of sprinkles I loved and then used those to pick 4 more variations that I thought all looked cute together.

Okay, friends, let’s get into the list, while we collectively drool over this peanut butter cup popcorn. I mean….can you even???

 

To make this popcorn, you’ll pop up some in your microwave or follow the directions from my stove top popcorn recipe. Next, you lay it out on a sheet, drizzle with peanutbutter magic shell and sprinkle peanut butter cups on top. Pop it in the fridge until the chocolate hardens and then serve in small bowls! Easy!

Mixed Berry Cobbler Dessert Recipe

Get ready for this one, friends! You will not believe how easy this dessert is and how simple it is to pull together. If you are in a pinch, need a quick idea, or just want to shake it up a little, try these mixed berry cobblers for dessert! Don’t let a crumbly topping scare you away from this one – it’s easy, promise! And the filling is literally just berries and sugar. C’est tout!

I served these hot, out of the oven and topped with fresh whipped cream. The whipped cream melted into the cobblers and it was simply lovely.

The cobbler topping baked into the sweet berries and gave a little saltiness and a little crunch that mixed so well with the baked berries.

One-Bite Mini Pumpkin Pie Recipe

Guys, I really love pumpkin spice. The day that the PSL becomes available, I feel like the fall season truly kicks off. Bring on the sweaters and scarves, and #pumpkinspiceeverything. But – I do not like pumpkin pie. But – I love these pumpkin pies!

I think the crust-to-pie ratio makes me like these minis, but I also love how silky the filling is. How quickly these come together doesn’t hurt, either!

Some of my friends and family aren’t really fans of pumpkin pie either, and I’m definitely more known for my apple pie. But there’s something magical about these little one-bite pumpkin pies that seem to be a crowd pleaser. Topping them with a bunch of whipped cream doesn’t hurt either!
