Vanilla Bean Angel Food Sheet Cake with Roasted Strawberries

Hey, hey, MDW! I love Memorial Day Weekend; it gets me so excited for summer. And BBQs. And cold drinks. And firepits at night. And all the summertime things I’m hoping we still get to enjoy during this quarantine!

This weekend’s menu is a simple mix of some burgers, hot dogs and watermelon salad, plus this vanilla bean angel food cake with the best roasted strawberries you’ll want to put on everything. I used a special vinegar, which you can find online here and here. But you could do a balsamic vin too!

Healthy(ish) Protein Banana Bread

This is another, have you quarantined if you haven’t made banana bread? With everyone making banana bread, I’ve been craving it – but with all the baking I’ve been doing (uh, hello Gigantic Chewy Coffee Chocolate Chip Cookies that have been on repeat), I needed to lighten this guy up. Big time.

Enter: healthy(ish) protein banana bread. It’s actually pretty light if you skip the whole put-frosting-all-over-it-part!

Homemade Samoa Bars

Those dang Girl Scouts, amirite?! My husband loves the Samoa cookies and I’ve been trying to recreate them at home for him so he doesn’t have to wait until it’s Girl Scout cookie season. To be honest, I’ve been struggling with an actual cookie and was going to throw in the towel all together. Then I was like, duh, Hailey, just make them into a bar. So. much. easier.

You know I love an easy dessert recipe and these are definitely easy. The hardest part is making the short bread, which is really NBD. I used premade caramel sauce because I wanted these to be something I could quickly throw together from ingredients I typically have on hand. I used finely grated coconut, so if you have thicker shredded (unsweetened) coconut I think that would be best – you’ll get more coconut flavor.

Gigantic Chewy Coffee Chocolate Chip Cookies

You know that feeling when you make something stupid good? Yeah, that’s these gigantic coffee chocolate chip cookies. They’re just stupid good.

I got a jar of instant coffee for those Dalgonas from earlier in the week and wanted to see how else I could make use of it. I can’t imagine going through an entire jar of instant coffee that quickly. Let me tell you – after making these cookies, I want to put instant coffee in and on everything to see what happens.

Recipe for Spring Blondies

This Easter is just going to be so strange, isn’t it? I’m planning our menu and trying to make it as special as I can without the rest of our family. We’re planning on steaks and smashed potatoes with some veg on the side and a fresh batch of these blondies!

These are so easy to whip up, just 7 ingredients and a few minutes and bam, you’ve got blondies ready to bake. Aren’t these so cute, with the spring colored M&Ms?!

Go-To Lactation Cookies

At some point I’ll share our daughter’s birth story with you all, but if you follow on Instagram, you know Miss Harper Grace was born on 02/02/2020 (cool date, huh?!) and was 8 weeks early. 8 weeks early. Lil’ punk! ha!

Since then, it’s been a little bit of a whirlwind around here. The house was not ready, we had a lot of organizing to do, and going back and forth to the NICU just kind of stops everything else going on in your life (like organizing, tidying, laundry, and so on). But I’ll share all that soon!

Anyway, let’s chat about these lactation cookies! They’re so good – even hubby likes them – and I’ve noticed a difference in my milk production when I have a few in a day versus when I don’t.

Chocolate Covered Clementines with Maldon Salt

This time of year, I go all in on the clementines! I love that the winter is a time for citrus to shine. I also go all in on the quick and easy treats, like these chocolate covered clementines. I actually will confess to you – these are tangerines. Trader Joe’s ran out of clems!

You know from my “recipe” for no-bake shortbread cookies, I love a good, easy, quick hack for a treat. All you need is the chocolate hard shell – this one is my favorite, and some Maldon salt. The salt flake is the key. Y’all know how much I love salt, and I take it very seriously. When you finish a dessert with salt, you want a large flake and the Maldon flakes are the best.

Strawberry Rhubarb Crumble Bars

You know when you have these stories in your head from growing up, and then you ask a parent about it and they’re all, “uh, no that was literally one time”? I think that’s my growing up experience with Strawberry Rhubarb pie. I have this distinct memory of my aunt “always making” SRP, but I’m 99% sure it was probably just one time.

To me, strawberry + rhubarb is a quintessentially summer flavor (okay, along with basil, but I digress). I’ve been playing around with rhubarb a lot this year (rhubarb ricotta cake coming at ya next week!) and I am 100% in love. We might even need to make a s + r ice cream topping, what do you think?

Blueberry Lemon Crumble Loaf Recipe

Lately, all I’ve been thinking about is a fruit + lemon formula when it comes to baking. Can we just get blueberry lemon everything?! You better believe I’m working on b&l muffins, scones, pancakes – a whole blueberry lemon week! Just kidding. But really, blueberry and lemon is one of the most perfect flavor combinations ever and then you top it with some crumble?! Stop it!
