Gingerbread Waffles for Christmas Morning

Even as an “adult,” there is something really magical about Christmas morning. I love that slow-to-rise sleepyness that accompanies the holiday, when you don’t have to rush right out of the house for family obligations. I like that hour or two before the craziness starts to enjoy the holiday. Growing up, I always looked forward to opening my stocking while waiting for my mom to whip up Christmas morning breakfast (usually cinnamon rolls and scrambled eggs – yum).

These waffles are truly waffles for a celebration. They are decadent and they feel so elegant. And let me tell you, if someone makes you these gingerbread waffles, they most definitely love you. They’re not hard to make, I don’t want to scare you! But they have more ingredients than the typical waffle recipe, but I promise they’re worth that little extra magic they bring to the table on Christmas morning.

And remember the cranberry apple compote recipe I shared last week?! You get to reuse it as a topping for these! We are a house divided over here. Husband is not a fan of the compote on the waffles, and prefers syrup. I think the compote adds a freshness and a brightness to the waffles. Also quite delish with syrup and compote. Just saying.

If you are a little short on time on Christmas morning, or don’t want to make a mess in the kitchen on a holiday, you can make these ahead! All you have to do is let them cool completely and then freeze them. You can reheat them in the oven or in a toaster. Easy!

Gingerbread Waffles Recipe

If someone makes these for you, they really, really love you. These gingerbread waffles are the perfect way to kick off a festive Christmas morning. 

Ingredients

  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups milk
  • 1/4 cup olive oil
  • 2 tsp ground ginger
  • 1.5 tsp cinnamon
  • 1 tsp all spice
  • 3 tbsp molasses
  • 1/4 cup brown sugar
  • 1 large egg

Instructions

  • Preheat your waffle iron.
  • Combine flour, baking powder, salt in a bowl, stir to combine, set aside. 
  • Combine remaining ingredients in a separate bowl, whisking until well combined. 
  • Add dry ingredients to the wet mixture, stirring until just combined. 
  • Spray your waffle iron with cooking spray and spoon onto the preheated waffle iron. Cook according to your manufacturer's directions. 

Notes

  • Keep waffles warm in a 200 degree oven while you make remaining waffles. 
  • To make ahead, allow waffles to cool completely before freezing. Reheat in an oven or toaster.
  • Serve with syrup, whipped cream, sprinkles, cranberry apple compote or any of your favorite waffle toppings!
