
This is one of those recipes that always makes people pause mid-bite and say, “Wait, what is in this?” The answer is a little magic and a little miso.
I usually serve it with white rice and charred broccolini, and every time I make it, I wish I’d doubled the batch.

Miso Orange Ginger Chicken Thighs
A little salty, a little sweet, a lot of flavor. I usually serve it with white rice and charred broccolini, and every time I make it, I wish I’d doubled the batch.
Ingredients
- 3.5 lbs bone in, skin on chicken thighs about 8 chicken thighs
- Kosher salt + freshly ground black pepper
- 1 tbsp neutral oil, like avocado
- 1/2 medium onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 c orange juice
- 2 c chicken stock
- 2 tbsp miso, divided I used brown rice miso
- 2 tbsp fresh ginger
- 1 tbsp unsalted butter
- Chili crisp + sliced scallions (optional, for serving)
Instructions
- Preheat oven to 350°F.
- Pat chicken dry and season generously on both sides with salt and pepper.
- In a large oven-safe skillet, heat oil over medium-high heat. Sear chicken thighs skin-side down in batches until golden and crisp (about 4–6 minutes). Flip and sear the other side for 1 minute. Remove to a plate.
- Add sliced red onion and sauté until soft, about 4 minutes. Stir in garlic and cook for another minute.
- Pour in orange juice, chicken stock, 1 tbsp miso, and ginger. Simmer until reduced by half.
- Return the chicken to the skillet and simmer 5 more minutes on the stovetop.
- Transfer the pan to the oven, uncovered, and braise until chicken reaches 185°F, about 20–25 minutes.
- Remove chicken and return pan to the stovetop. Add 1 tbsp miso and butter, then reduce the sauce by half.
- Pour sauce over the chicken to serve. Top with chili crisp and scallions if desired.
