Okay. This is probably going to be one of those recipes that you make and then you’re like, crap I better give half of these to the neighbors. When I made these, we had one bite, and I texted a pic to our neighbors across the street and asked them if they wanted some. I brought them across (mask on, yes), and thank god. We would have eaten all of these and god help us, we are really trying to avoid the quarantine 15!

These sticky pecan cinnamon rolls are so easy. There ain’t nothin’ wrong with canned cinnamon rolls, especially when it’s so hard to find yeast. And, let’s be real – we’re all cooking and baking a lot more than usual. It’s nice to have a shortcut for something out of this world delicious in your back pocket.

I’ve been cooking so much more than usual, which has been a ton of fun for me. I’ve been overflowing with creativity and recipes are just coming to me, so I can’t really complain. Have you guys been ordering your groceries since we’ve been quarantined? Or just, in general ordering groceries? Then you know the whole, put this in my cart and pray this is what actually comes, right? So, these southwestern won tons were really supposed to be southwestern egg rolls. I ordered the egg roll wrappers, but the won tons are what came.

So, before we even really get into this recipe – just know, it will work with egg roll wrappers. And clearly it works with wonton wrappers. And it’s really all just a vehicle to get that spicy ranch dressing in your mouth. You’re welcome.

Quarantine has really challenged me to step up my lunch game. Having just gone back to work, it’s nice to have something to look forward to and not have a #saddesklunch. It feels like a blessing to be home and have the space to be a little more creative, especially in the middle of the day.

These hummus toasts come together in just 20 minutes, most of which you’re just roasting up the brussels sprouts. You use store bought hummus, spread it over the toasts, spread the brussels sprouts over them and BAM you’ve got lunch, sis!

I’m trying to space them out for you, but really, I need to tell you about this pulled adobo chicken I’ve been making! So far, we’ve had this chicken on its own, on sliders, in a burrito bowl and these tacos!

Vanilla Bean Angel Food Sheet Cake with Roasted Strawberries

Hey, hey, MDW! I love Memorial Day Weekend; it gets me so excited for summer. And BBQs. And cold drinks. And firepits at night. And all the summertime things I’m hoping we still get to enjoy during this quarantine!

This weekend’s menu is a simple mix of some burgers, hot dogs and watermelon salad, plus this vanilla bean angel food cake with the best roasted strawberries you’ll want to put on everything. I used a special vinegar, which you can find online here and here. But you could do a balsamic vin too!

Candied Bacon Panzanella Salads with Rye Bread Croutons

If you can’t tell by now, we are totally feeling the panzanella lately! Last week, it was the salmon panzanella, this week, BLT’s! These are kicked up a notch with candied bacon and I used rye bread for the croutons. Let me tell you. That rye bread is killer in this salad!

Candied bacon is simple to make – just a bit of brown sugar and some maple syrup. I used Bushwick Kitchen’s Spicy Maple for this batch – so good! If you follow on Instagram, you know how hard I stan for Bushwick Kitchen. Scroll towards the bottom of the post for all my favorite BK.

Basil Lemon Vinaigrette Dressing

I hope you’re all ready for a lot of recipes with basil and lemon. You should see the list of recipes I have coming! Lots of fresh herbs, especially basil. This vinaigrette has been on repeat here, from salads to sandwiches to drizzling over roasted veg. We’ve even used it as a marinade for chicken.

And you can’t go wrong having a few vinaigrette recipes in your back pocket!

Peanut Butter Bacon Dog Treats

I wish I was the #dogmom that whipped up dog treats every week and kept the cookie jar perfectly stocked all the time. But let’s be real, this girl ain’t no Martha Stewart. That’s alright. Every once in a while, usually when I make some candied bacon, I save a few pieces of bacon for these dog treats.

These guys are super easy to put together, just some flour, eggs, peanut butter and bacon. You can cut the treats into any shape, but I use these cookie cutters. I like that I can make any size, which is great when you make treats for a gift!
